In case you're wondering why some of my carb counts seem high, it's because I don't subtract the fiber. I thought I'd play it safe and use the full count. I just tried the "Mockafoni & Cheese" recipe for my lunch and it was pretty good. Before I made this, I had no idea how many servings it would make. I realize now that it will only make 4 servings and not the 6 I'd based my daily carb counts by. That's why I went a bit high on my total for today. As I keep trying all these new recipes, I've been sneaking some of them on my family. Hopefully, I'll eventually be able to cook mostly low-carb foods and they'll never suspect a thing!

*McDonald's website lists the Chicken McGrill as having: chicken breast (4 carbs), lettuce (1 carb), 1 slice tomato (1 carb), and mayo (0 carbs). There's no way that the amount of lettuce used was even 1/2 carb worth and the tomato was pretty skinny, but I counted that. I wonder what they put in the meat to make it 4 carbs. Maybe they pumped it with a sweetened liquid or there's a lot of sugar in the spices on the outside. 4 carbs still seems a bit high for a piece of real chicken breast, but after shopping, I had to pick up something quick for the family's lunch. It was pretty tasty, even without the bun.

Be sure to check out the Taco Salad recipe. I used homemade taco seasoning, which was really good and less than 1/2 the carbs of store bought, and much cheaper.

** I bought 3 new flavors today to try out. I cut each bar into about 24-30 pcs. So, 1 piece = 1/24 to 1/30 bar. The flavors I bought are Creamy Lemon Chiffon, Creamy Berry Cheesecake, and Chocolate Mocha Crunch. I have to say I wasn't very impressed with any of them, but they might come in handy sometime when I don't have time to fix a meal right away. Just a few tiny pieces is more than enough for me.

I made a single serving of the salmon sauce to put over my tuna patties. They weren't quite so dry that way. The Cajun Chicken recipe is one that I made before this diet. The recipe is pretty much unchanged except the pasta is left out and I reduced the amount of cream since there's no pasta to soak it up. For the rest of the family you can serve this over pasta.

We're having company over the holiday weekend, so I'm not going to keep careful track of my carbs. I do plan to bring some low carb dishes to my sister's for our family gatherings. My sister knows I'm on low carb and said she'd sort of plan around that. We'll probably be having hamburgers on Saturday and a pork roast on Sunday. I'm going to bring a broccoli salad, Helen's "potato" salad, coleslaw, a low carb cheesecake with some mixed berries, and perhaps some pecan macaroons. These aren't all for one day, but I haven't decided which things to bring to which gathering. For lunch, I'll stick with chef salad or something. Breakfast will be Sausage Casserole.
