CAULIFLOWER WITH BROWNED BUTTER
Frozen cauliflower or fresh cauliflower, cut into florets
2 tablespoons butter
Salt, to taste
Nutmeg, optional

Cook the cauliflower until tender. Drain and transfer to a bowl; keep warm. In the same pot, melt the butter over medium heat. Cook and stir constantly until it just begins to brown. Remove from the heat at once; it will continue to brown so immediately pour it over the cauliflower. Season to taste.

1-cup serving
Do not freeze

Browning the butter gives it a nutty flavor. If you've ever had browned, buttered breadcrumbs on your cauliflower, this is the next best thing, but without the carbs.
