SMOKY ALMOND CHICKEN SALAD
2 cups diced cooked chicken
2 ounces Swiss cheese, diced
2 ounces smoked almonds
3/4 cup mayonnaise
1 teaspoon chives
1/8 teaspoon celery seed
Spicy Seasoning Salt, to taste
Pepper, to taste

Mix all of the ingredients and chill overnight. Serve over shredded lettuce or fresh spinach, if desired.

Makes about 4 servings
Do not freeze

I thought I'd give this recipe another try and see if I could improve it a bit. I think a little celery would be nice, but I didn't have any on hand. I'd probably leave out the cheese altogether as it seems out of place in chicken salad. Other than that, I might as well make my regular Chicken Salad recipe and add smoked almonds to it. Here are the counts if the cheese is omitted and a stalk of celery, chopped, is added:
