GEORGE'S SOUTHWESTERN CHILI CON CARNE
2 pounds ground beef
1/2 cup red onion, chopped (2 3/4 ounces)
1 green pepper, chopped
1 red bell pepper, chopped
2 tablespoons chili powder
1 tablespoon cumin
2 cloves garlic, minced
1/4 teaspoon cayenne
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon garlic powder
3 Roma tomatoes, diced (about 8 ounces)
2 tablespoons fresh cilantro, choppedIn a large skillet, brown the ground beef, onion and garlic; drain the grease. Add the peppers and all of the spices. Stir in the tomatoes; bring to a simmer and cook 10 minutes. Stir in the cilantro. Server over chopped lettuce and garnish with shredded cheese and sour cream, if desired (not included in the counts).

This is from George Stella's TV show. I changed the cooking method slightly to simplify it and to keep the peppers from getting overcooked. I also cut back on some of the spices to save a few carbs. George used 1/4 cup of chili powder and 3 tablespoons of cumin which seemed like an awful lot. I also reduced the ground beef to an even 2 pounds instead of 2 1/2 pounds. This is very good and there were plenty of spices to suit me. It's a little different than traditional chili, which usually has tomato sauce, but the flavor is very similar.
