MOCK MASHED POTATOES
16 ounces frozen cauliflower
1 tablespooon butter
2 ounces cream cheese, softenedOil a pie plate and put in the cauliflower in a single layer. Bake at 350º until dry, about 30-45 minutes. It's ok if it browns a little. Remove from the oven and add the butter. Cool slightly, then pulse in a food processor. Add the cream cheese and pulse until smooth.

I baked my cauliflower about 40 minutes, but I don't think that was long enough to cook it completely. When I pureed it in the food processor, it was a bit dry and crumbly, so I put it in a covered casserole and microwaved it a few minutes and that seemed to help a little. I think I prefer the taste and texture of the Faux Mashed Potatoes. They come out more moist and creamy.
