NANCY LC'S COCONUT BREAD PUDDING "BOWL MUFFIN"
1/3 cup Carbquik
1/3 cup coconut Da Vinci sugar free syrup
1/4 cup unsweetened coconut, about 1 ounceMix all of the ingredients in a 4-cup microwaveable bowl. Microwave on HIGH about 2-3 minutes.

Although this is a bit cake-like, it tastes like salty Cream of Wheat cereal. If the sweetness was cut back a little, by replacing most of the syrup with water, it would be similar to cornbread in flavor and texture. I don't think I'll bother trying that though and won't make this again.
