CHEESY HAM AND GREEN BEAN CASSEROLE
1 small onion, sliced very thin, 2.5 ounces
1/4 cup celery, finely diced
2 tablespoons butter
2 14 ounce cans French-cut green beans, drained well
4 ounce can mushrooms, drained well
12 ounces ham, diced
1/4 cup mayonnaise
1/4 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder
8 ounces pepper-jack, cheddar or Swiss cheese, shreddedSauté the onion and celery in butter until very tender and a little browned. In a 2-quart greased casserole, mix the green beans, mushrooms, ham, mayonnaise and seasonings. Stir in the onion mixture, then the cheese. Bake, uncovered, at 350º 30 minutes, or until browned and bubbly. If assembling ahead of time and chilled, bake an additional 10-15 minutes.

This is yet another take on Dottie's Green Bean Casserole. Green beans are a bit high in carbs so watch your portion size. I made mine with pepper-jack cheese, but I think it would be very nice with Swiss cheese. This was very good and the pepper-jack cheese gave it a spicy kick. I don't recommend using ham that has been frozen. Once it started to cook, it released all of its liquid and I ended up with a watery casserole. This shouldn't be a problem if you use fresh ham and drain the veggies well.
