HOT TURKEY BREAKFAST SAUSAGE
1 pound ground turkey, 85% lean
1 teaspoon chicken seasoning *
1/2 teaspoon pepper
1/2 teaspoon ground sage
1/2 teaspoon coriander
1/4 teaspoon salt
1/4 teaspoon cayenne **
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon granular Splenda (see my comments below)

Blend the turkey and spices well. Either shape in patties and fry or crumble up and fry as bulk sausage.

Makes 4-6 servings
Can be frozen

* I buy a blend of spices called Chicken Seasoning but I'm not sure if it's widely available. I think you could use 1/2 teaspoon poultry seasoning and 1/2 teaspoon salt instead.

** For milder sausage, omit or reduce the amount of cayenne. With the cayenne, this is VERY hot.

This started with a Top Secret recipe from Todd Wilbur but his recipe had almost no flavor. I ended up doubling the amount of spices he called for but cut back on the amount of cayenne. Todd used ground pork but I thought I'd save money and use ground turkey since they're both very bland meats anyway. Turkey is quite a bit leaner than pork though so the texture won't be quite like real sausage. The price of commercial pork sausage has gone through the roof lately and it bugs me to pay more for sausage than I pay for good ground beef. I can get a pound of ground turkey for only $1.57 versus well over $3.00 pound for pork sausage.
