This is from George Stella's TV show. I changed the cooking method slightly to simplify it and to keep the peppers from getting overcooked. I also cut back on some of the spices to save a few carbs. George used 1/4 cup of chili powder and 3 tablespoons of cumin which seemed like an awful lot. I also reduced the ground beef to an even 2 pounds instead of 2 1/2 pounds. This is very good and there were plenty of spices to suit me. It's a little different than traditional chili, which usually has tomato sauce, but the flavor is very similar. I enjoyed this very much, especially with a little sour cream and a Cheddar Biscuit. If you want to see how George made his, click here. Click the photo to see a close-up.
