RACHAEL'S CREAMED SPINACH
20 ounces frozen chopped spinach, thawed and drained well
2 tablespoons butter
1/2 cup heavy cream
Salt and pepper to taste

Heat the butter and cream in a medium skillet until bubbly. Add the spinach and salt and pepper to taste. Cook over medium heat until the spinach is heated through, about 3 minutes.

Makes 6 servings
Do not freeze

I get a lot of ideas from Rachael Ray's 30 Minute Meals show and this is one of them. This tastes ok, is quick and easy, but I think that the amount of spinach is way too much for the cream sauce. It gets lost in the spinach so you can't even tell it's there. In fact, there is so little sauce that it only took seconds for it to thicken and disappear into the spinach. There is no actual cooking involved here, you're only heating up the spinach. What I would do if I were to make this again would be to use just 10-16 ounces of spinach. I have a feeling that 16 might still be too much. Rachael said this should make four servings, but I doubt if anyone would eat that much spinach so I've increased the servings to six.
