QUICHE WITH CARAMELIZED ONIONS & ROASTED RED PEPPERS
1 tablespoon butter
1 medium onion, slivered, 4 ounces
8 ounces Swiss cheese, shredded
1 large or 2 small roasted red peppers, cut in strips, about 2 1/2 ounces
1/2 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper
SautÚ the onion in butter until golden brown. Put the cheese, red peppers and onions in a large greased pie plate. In a medium bowl, beat the eggs, cream, salt and pepper untl well blended. Pour the egg mixture over the cheese and mix everything well. Bake at 350║ about 35 minutes or until a knife inserted into the center comes out clean. Let stand 10 minutes before cutting and serving.
Makes 6-8 servings

I think that the red peppers go quite well with the Swiss cheese. Next time I might put in even more. I might also try adding some spinach.
