MICROWAVE SWISS CHEESE SAUCE
6 ounces Swiss cheese, shredded
1/2 cup heavy cream
1/2 cup mayonnaise
1/2 teaspoon onion powder
1/4 teaspoon salt
1/2 teaspoon pepper
Pinch nutmeg

In a medium microwaveable bowl, mix the cheese and cream. Microwave 2 minutes on HIGH to melt the cheese; stir until well blended and creamy. Whisk in the mayonnaise and seasonings. Reheat on 50% power if necessary to heat through.

Makes about 1 1/2 cups or 6 servings
Do not freeze

You can use any kind of cheese in for this sauce. If you're thinking that 6 ounces of cheese is an odd amount, that's what comes in a block of Swiss cheese where I shop. You can use 8 ounces, but you may need to increase the amount of cream if it seems too thick. I used 1/2 teaspoon of salt in mine and it was a little too salty so I've cut it back to 1/4 teaspoon in the recipe. You can always add more to taste, but go easy at first.
