SUE'S MEXICALI GROUND BEEF AND CABBAGE PIE
3 cups cabbage, chopped, about 8 ounces or 1/2 a small cabbage
1 pound ground beef
1 tablespoon Seasoning for Tacos
2 eggs
1 tablespoon heavy cream
8 ounces cheddar cheese, shredded
Salsa, 1 tablespoon per serving
Sour cream, 1 tablespoon per serving

Brown the hamburger; drain the fat. Add the cabbage and 1 tablespoon butter; cook until the cabbage is soft. Add the seasoning and 1-2 tablespoons water. Whisk the eggs and cream. Put 1/2 of the cheese in a greased pie plate. Pour the eggs over the cheese. Spoon the hamburger mixture over the eggs; press slightly to condense the meat. Top with the remaining cheese. Bake at 350º 20-30 minutes. Serve with salsa and sour cream.

Makes 4-6 servings

This was pretty good and gave me the idea for a "cabbage roll pie" recipe.
