MAGIC PEANUT BUTTER PUDDING
1 tablespoon natural peanut butter
2 teaspoons granular Splenda or equivalent liquid Splenda
2 tablespoons heavy creamPut everything in a little custard dish. Mix with a spoon until thick and fluffy. At first it will look like the ingredients will never blend together but they will eventually and you'll end up with a fluffy mousse-like pudding with a light peanut butter flavor. It will transform right before your eyes like magic!

This little bit of yumminess is something that I came up with on the spur-of-the-moment one day. I had no idea if it would even work and was surprised when the cream made the peanut butter turn all fluffy and light without having to whip the cream first. This makes just enough to stop a craving for something sweet. The consistency would also be perfect for frosting a low carb cake. A single batch would probably be enough for a 3 Minute Chocolate Cake or some kind of low carb muffin. Of course you could double or triple the recipe to frost a larger cake or to serve as pudding to your family. The serving in the photo is actually a double batch. It would have been too hard to get a decent picture of it as a single batch. I don't think that it would be too difficult to eat that much though but I'd be afraid to make more than that at one time because it would be much too tempting! Click the photo to see a close-up.
