HASH BROWNS WITH SCRAMBLED EGGS
1 cup leftover Faux Rice
1 tablespoon onion, optional
1-2 tablespoons butter
1-2 eggs
Salt and pepper, to taste

For one serving, heat a tablespoon or so of butter in a small, nonstick skillet. Add the Faux Rice and onion, if using. Cook on medium-high heat until the "rice" and onion are nicely browned, stirring frequently. Break the egg(s) into the "rice" and stir to scramble. Cook and stir until the egg is done to your liking. Season to taste with salt and pepper.

Makes 1 serving
