CHICKEN AND SPINACH PARMESAN
2 cups diced cooked chicken
10 ounces frozen spinach, drained well
1/2 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 ounces freshly grated parmesan cheese, 3/4 cup
1 ounce mozzarella cheese, shredded, 1/4 cup

Arrange the chicken and spinach in a greased 8x8" baking dish. Mix the remaining ingredients and spread over the chicken. Bake, uncovered, at 350º for 40 minutes or until the top is nicely browned. Don't skimp on the baking. The topping needs to be quite brown for good flavor.

My first impression of this was that it was bland, but then I'd only tasted a bite of chicken with some spinach. But, once I got a bite with some of the topping, it was a whole different matter. The topping is wonderful. There was no mention of seasoning the chicken and spinach, so I assumed that the topping would be enough, but even with the little bit of salt I sprinkled over the spinach, before adding the topping, it wasn't enough. I think perhaps mixing a little of the topping mixture into the chicken and spinach might be an improvement, but make sure to leave enough to cover the top so that it can get nice and brown. I might even try this topping on something else sometime, like maybe in place of the custard mixture on top of the Cheeseburger Quiche or the Quiche Italiano.
