ANTYMAYMAY'S CHICKEN BROCCOLI CASSEROLE
3 cups diced cooked chicken
1 medium onion, sliced thin, 4 ounces
1 tablespoon butter
16 ounces frozen broccoli
3 ounces cheddar cheese, shredded, 3/4 cup
Cheese Sauce, see recipe below

In a small skillet, cook the onion in butter until golden brown; set aside. Meanwhile, cook the broccoli as directed on the package until just barely tender, about 5 minutes; drain well. Prepare the cheese sauce. Put the chicken, broccoli and cheese sauce in a 2-quart casserole or baking dish and gently mix to coat everything with the sauce. Season to taste with salt and pepper, if needed. Sprinkle the shredded cheese on top, then cover with the onions. Bake at 350º about 30 minutes until hot and bubbly.

Makes about 6 servings

CHEESE SAUCE
2 ounces cream cheese, diced
4 ounces cheddar cheese, shredded
1/2 cup heavy cream
1/4 teaspoon dry mustard
Pepper, to taste

Original Method: Heat cream over medium-low heat until warm. Add cream cheese and whisk until melted. Add cheddar cheese about 1 tablespoon at a time, letting it melt before whisking in more. Stir in dry mustard and pepper.

Easier Method: Place the cream cheese in a medium microwaveable bowl. Soften about 15 seconds on HIGH. Add the cheese then pour in the cream. Sprinkle with the dry mustard and pepper. Microwave on HIGH about 2 minutes, stirring well every 30 seconds until smooth and creamy.

This is very good, and nice and creamy, but what really makes this dish are the caramelized onions on the top. Too bad that onions are so carby or I'd add even more. I didn't have any diced, cooked chicken in the freezer so I thawed a couple of jumbo boneless chicken breasts, seasoned them liberally with my Seasoning Salt and grilled them on my indoor grill. I used the easier method for making the cheese sauce. Antymaymay used the same Cheddar Cheese Sauce recipe that I had a little trouble with when I made it on the stove. It had come out grainy. That wasn't an issue when made in the microwave.
