BBQ CHEESEBURGER PIE
1 pound ground beef
1 small onion, chopped (about 2 1/2 ounces)
Salt and pepper, to taste
8 ounces cheddar cheese, shredded
3 eggs
1 cup My Favorite BBQ Sauce *Brown the ground beef with the chopped onion; season with salt and pepper. Drain the grease. Place the ground beef in a greased 10-inch pie plate. Top with half of the cheese; lightly mix the cheese into the meat. Beat the eggs and barbecue sauce; pour over the cheese and spread it evenly. Bake at 350º 30 minutes or until the pie is firm in the center. Sprinkle with the remaining cheese; bake 5 more minutes or until the cheese is melted. Let stand 10 minutes before serving, otherwise the pie will be too soft to remove from the pan.
Makes 6 servings
* The carb counts are based on using zero carb sweetener in the BBQ sauce. Otherwise the carbs would be too high per serving. You can use any sugar free barbecue sauce you like in place of my recipe. Mine has 21 net carbs per cup when made with liquid Splenda. It would have 27 net carbs per cup if made with granular Splenda.

This is another variation of my Salsa Sausage Quiche recipe. This time I used my homemade barbeque sauce instead of salsa and ground beef instead of pork sausage. Make sure that you reserve half of the cheese for topping it later or else the top will look very strange. Click the photo to see a close-up.
