BACON CHEESE FRITTATA
6 eggs
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper
2 green onions, chopped
5 slices bacon, fried until crisp
4 ounces cheddar cheese

Beat the eggs, cream and seasonings. Pour into a large greased pie plate. Top with the remaining ingredients and bake at 350º 30-35 minutes. Let stand a few minutes before serving.

Makes 6 servings

This is not really a true frittata, but a cross between a frittata and a quiche. What makes this more like a frittata than a quiche is the order that the ingredients are placed in the pan. There's a fluffy egg layer topped by the cheese.
