SUMMER SAUCE
1 tablespoon butter
1 small onion, minced, 2 1/2 ounces
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon thyme
1/2 teaspoon xanthan gum
1 tablespoon balsamic vinegar
1 cup chicken broth or water
1 tablespoon hoisin sauce
2 tablespoons low carb ketchup

In a small bowl, mix the salt, garlic powder, thyme and xanthan gum; set aside. In a medium saucepan, sauté the onion until tender and golden, stirring occasionally. Stir in the spice mixture and blend well. Stir in the vinegar and broth or water. Add the hoisin sauce and ketchup; bring to a boil and cook until thickened. Serve with roast pork or other meats.

Makes 4 servings

This is based on a recipe from a Penzeys spice catalog. I tweaked it a bit to get the carb count down and also added the xanthan gum to thicken it. My friend, Nancy, and her husband really liked this but I wasn't crazy about it. Nancy added mushrooms to hers and used a little more hoisin sauce. The flavor reminds me of steak sauce which I'm not fond of.
