SCRAMBLED EGGS WITH SMOKED SALMON AND CHIVES
8 eggs
2 tablespoons chives, plus more for garnish
3 tablespoons heavy cream
2 tablespoons butter
Small onion, chopped, 2 1/2 ounces
6 ounces smoked salmon, cut in strips

Beat the eggs, chives and cream. Heat the butter in a large skillet. Add the onion and sauté until golden. Add the eggs and cook until almost set; stir in the salmon. Cook until the eggs are still moist. Sprinkle with chives, if desired.

Makes 4 servings

I thought this sounded good, but I ran into a problem. When I bought the salmon, I didn't notice the expiration date and it had expired two days before I bought it. After cooking this, I thought it smelled a bit off, so I dumped it. I'm not sure if I'll try the recipe again. It was a bit expensive to make.
