PORK ROAST PATTIES
Because I just threw together some leftovers, I can't give you the nutritional counts for these. They are virtually carb-free though since they're just pork, fat and egg.

Leftover roast pork
1-2 eggs
Oil or pork fat for frying

Roughly chop the roast pork and put it in a food processor with the chopping blade inserted. Pulse until the meat is ground but not pureed. Add an egg or two and process to blend it with the meat. Shape the mixture into patties and pan-fry in hot oil until crispy and brown on the outside.

This is how I made them this time but I can see the possibilities for tweaking them. You could add all kinds of spices, onions or other ingredients to the patties. Click the photo to see a close-up.
