POPPY SEED DRESSING
1/3 cup oil
5 tablespoons granulated Splenda or equivalent liquid Splenda
1/4 cup white vinegar
1/4 teaspoon orange extract *
1/2 teaspoon salt
Dash pepper
Pinch celery seed
1 teaspoon poppy seeds
1/2 cup mayonnaise

Whisk together everything but the mayonnaise. Add the mayonnaise and whisk until smooth and creamy.

Makes about 1 cup or 16 servings

* You may want to omit the orange extract if you're going to be using it in salads without fruit, but the flavor is subtle.

I've never actually tasted real poppy seed dressing, but I think this tastes pretty good and went very well with my Chicken Strawberry Spinach Salad.
