MINICARB GARLIC & CHEESE BISCUITS
2 tablespoons baking powder
1/4 teaspoon salt
1/2 teaspoon garlic powder
1 3/4 cups MiniCarb bake mix (has been discontinued)
1/4 cup butter, cold
2 ounces cheddar cheese, shredded
3 eggs
1/4 cup oil
1/2 cup heavy cream
1/4 cup water, or as needed

Combine the dry ingredients in a large bowl. Cut in the cold butter that has been cut into tiny pieces. Toss in the cheese. In a small bowl, beat the eggs, oil and cream; add to the dry ingredients and stir just until everything is moistened. Add enough water to make a dough that's not too wet. It should be about like cookie dough. Drop by large spoonfuls onto a lightly greased baking sheet keeping them somewhat mounded. Bake at 350º about 20 minutes until golden brown.

These looked like they'd be good, but they taste terrible. I suspect it's the taste of soy that I've heard can be nasty. The original recipe, from the Carbsense website, called for a full tablespoon of garlic powder. I thought it must be a typo, but now I think it was used to cover up the terrible taste. If my husband won't eat these, they'll go into the trash. I'll think twice about using MiniCarb bake mix in the future and only use it in highly flavored recipes.
