LOW CARB CHINESE GREEN BEANS
14 ounce bag frozen whole green beans
1 teaspoon chicken bouillon granules
8 green onions, chopped, about 2 1/4 ounces
2 cloves garlic, minced
1/2 teaspoon ground ginger
1 teaspoon granular Splenda
1 tablespoon soy sauce
1 tablespoon natural peanut butter
1/8 teaspoon sesame oil
Salt, to taste

Put the green beans in a microwaveable casserole dish along with the bouillon granules. Cover and microwave on HIGH 4 minutes. Meanwhile, combine the green onions, garlic, ginger, Splenda and soy sauce in a small bowl. Pour the sauce over the beans and mix well. Cover and microwave on HIGH 4 minutes. Stir in the peanut butter and sesame oil until the beans are well coated. Season with salt to taste.

Makes 4-6 servings

I found this recipe online somewhere. I didn't realize until I was about to make it that the instructions mention soy sauce but there is none listed in the ingredients. I decided to use 1 tablespoon. I thought that 1/2 teaspoon of ginger sounded like a lot so I used about 1/8 teaspoon. These taste alright but not as good as I was hoping. Also, the sauce tends to end up in the bottom of the bowl instead of coating the beans and the beans were a little overcooked.
