BAKED FISH WITH CREAMY MUSHROOM SEAFOOD SAUCE
1 pound fish fillets, thawed
Salt, pepper and desired seasonings
Butter, as needed
3 ounces fresh mushrooms, sliced
6 ounces shrimp
12 ounces bay scallops
6 ounce can crab meat, drained
1 clove garlic, minced
1 batch Cream of Mushroom Soup for Recipes
Fresh parsley, minced

Prepare the Cream of Mushroom Soup first; set aside and keep warm. Arrange the fillets in a greased baking pan. I lined mine with foil for easy clean-up. Sprinkle the fish with your desired seasonings. Top with thin pats of butter or melt a little butter and pour it over fillets. Bake at 425º for 10-15 minutes, until the fish is done. If desired, turn on the broiler and broil until the top of the fish is lightly browned.

Meanwhile, heat a little butter, oil or olive oil in a large skillet. Sauté the mushrooms, garlic, shrimp and scallops until cooked. Drain any liquid from the seafood and return the seafood to the skillet. Add the crab meat. Stir in the mushroom soup and a little parsley. Stir to combine with the seafood and heat through. Season to taste. Place the fish fillets on serving plates; top each serving with 1/4 of the seafood mixture.
