CREAMY CHILE SAUSAGE GRAVY
1 pound pork sausage
8 ounces cream cheese, softened
10 ounce can Ro-tel, undrained (diced tomatoes with green chiles)

Brown the sausage. Stir in the softened cream cheese; heat on the stove or in the microwave until melted. Stir in the Ro-tel tomatoes. Simmer 15 minutes on the stove or on LOW-MEDIUM power in the microwave, until thickened.

Makes 6-10 servings

I used this as a sauce to put over roasted chicken thighs. I'm also going to try this over scrambled eggs. Some other ideas: over chicken breasts, over cabbage, cauliflower or spaghetti squash, etc.
